H\u00e9las, il est difficile de consommer le pain aussi rapidement \u00e0 moins de le faire cuire \u00e0 la maison. Avec le temps, le pain perd de son humidit\u00e9, la cro\u00fbte perd son croustillant et la mie raffermie. On parle alors du ph\u00e9nom\u00e8ne de rassissement.<\/strong><br \/><br \/>Le rassissement se produit \u00e0 plusieurs temp\u00e9ratures, mais il est acc\u00e9l\u00e9r\u00e9 \u00e0 4\u00b0C. C\u2019est pourquoi on sugg\u00e8re parfois d&rsquo;\u00e9viter de conserver le pain au r\u00e9frig\u00e9rateur. Par contre, un pain conserv\u00e9 \u00e0 la temp\u00e9rature de la pi\u00e8ce pourra moisir plus vite, surtout s\u2019il ne contient pas d\u2019agent de conservation synth\u00e9tique comme c\u2019est le cas pour les pains biologiques. <br \/><br \/>Sans agents de conservation, un pain au levain se conservera plus longtemps qu\u2019un pain pr\u00e9par\u00e9 avec de la levure. En effet, l&rsquo;acidit\u00e9 produite par les bact\u00e9ries lactiques du levain retarde l\u2019apparition des moisissures. Pour une plus longue conservation et pour ralentir le rancissement, il est sugg\u00e9r\u00e9 de congeler le pain entier ou en tranches. Le pain congel\u00e9 peut \u00eatre conserv\u00e9 ainsi pendant une p\u00e9riode allant jusqu&rsquo;\u00e0 3 mois. <br \/><br \/>Apr\u00e8s quelques jours de conservation sur le comptoir de la cuisine ou au r\u00e9frig\u00e9rateur, votre pain semble avoir perdu un peu de ses qualit\u00e9s gustatives sans pour autant \u00eatre moisi?
