Ce proc\u00e9d\u00e9 ancestral permet de conserver toutes les composantes du grain, soit le germe, le son et l\u2019endosperme (qui contient l&rsquo;amidon ainsi que les prot\u00e9ines qui forment le gluten).<br \/><br \/>\u00c0 l\u2019inverse, pour obtenir une farine raffin\u00e9e comme la farine blanche, on retirera le germe et le son et, par le fait m\u00eame, une partie des fibres, des vitamines et des min\u00e9raux. Au Canada, la farine blanche doit obligatoirement \u00eatre enrichie de vitamines B, de fer et d&rsquo;acide folique. Certains fabricants d\u00e9cideront d&rsquo;enrichir en d&rsquo;autres vitamines et min\u00e9raux perdus au cours de la mouture. Toutefois, comme ce n&rsquo;est pas obligatoire, plusieurs farines blanches ne retrouveront pas les \u00e9l\u00e9ments nutritifs absents.<br \/><br \/>La farine de bl\u00e9 entier, de son c\u00f4t\u00e9, doit contenir au moins 95% du grain de bl\u00e9. Pour l&rsquo;obtenir, les fabricants s\u00e9parent tout d&rsquo;abord le grain de bl\u00e9, puis utiliseront la farine blanche en prenant soin de rajouter une partie du grain retir\u00e9. Pour prolonger la conservation du produit, le germe et une fraction du son ne seront habituellement pas rajout\u00e9s \u00e0 la farine. La farine de bl\u00e9 entier aura donc perdu, par cons\u00e9quent, une partie de ses \u00e9l\u00e9ments nutritifs. <br \/><br \/>Plusieurs pains commerciaux sont faits principalement de farine blanche. Pour obtenir cette couleur blanche, on utilise une petite quantit\u00e9 d&rsquo;agents de blanchiment autoris\u00e9s comme les peroxydes de benzoyle. Une farine tout usage non blanchie aura, par cons\u00e9quent, une couleur un peu plus jaun\u00e2tre, car elle aura conserv\u00e9 les pigments que l&rsquo;on retrouve de fa\u00e7on naturelle dans la farine fra\u00eechement moulue.<br \/><br \/>Vous cherchez un pain fait de grains entiers?
