Il consiste \u00e0 broyer les grains entiers entre deux meules de pierre circulaires. Ce proc\u00e9d\u00e9 conserve toutes les composantes du grain, soit le germe, le son et l&rsquo;endosperme. Non seulement le germe du grain est conserv\u00e9, mais il demeure intact parce qu\u2019il ne chauffe pas durant le proc\u00e9d\u00e9 (maximum 44\u00b0C). Le germe de bl\u00e9 est riche en vitamines et min\u00e9raux, et contient des gras polyinsatur\u00e9s qui rancissent rapidement. C&rsquo;est en partie la raison pour laquelle le germe est souvent retir\u00e9 lors du processus de fabrication de la farine. La farine obtenue est moins nutritive, mais elle se conserve plus longtemps.<\/strong> <\/span><\/p><p dir=\"ltr\">\u00a0<\/p><p>Plut\u00f4t que d&rsquo;utiliser des meules de pierre, plusieurs moulins commerciaux optent pour des meules en m\u00e9tal. Une m\u00e9thode de transformation commerciale plus r\u00e9cente consiste \u00e0 retirer le germe et la majeure partie du son des grains de bl\u00e9 avant de les moudre.
