Un jour, une p\u00e2te \u00e0 base de c\u00e9r\u00e9ales aurait \u00e9t\u00e9 oubli\u00e9e pendant plusieurs heures, voire des jours et elle se serait mise \u00e0 gonfler gr\u00e2ce \u00e0 la fermentation. <br \/><br \/>Le levain, un m\u00e9lange de farine, d&rsquo;eau et de ferments, est utilis\u00e9 pour la fabrication du pain depuis probablement l&rsquo;Ancien Empire \u00e9gyptien, alors qu&rsquo;on ne connaissait m\u00eame pas l&rsquo;existence des levures. Il a \u00e9t\u00e9 utilis\u00e9 exclusivement pour la fabrication du pain jusqu&rsquo;\u00e0 la d\u00e9couverte de la levure s\u00e8che.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-041ab7c e-con-full e-flex e-con e-parent\" data-id=\"041ab7c\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-d516e22 elementor-widget__width-initial elementor-widget elementor-widget-text-editor\" data-id=\"d516e22\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Le levain a la capacit\u00e9 de cro\u00eetre, c&rsquo;est-\u00e0-dire qu&rsquo;il peut \u00eatre nourri avec de la farine et de l&rsquo;eau afin que les microorganismes se multiplient. C&rsquo;est \u00e0 partir de ce proc\u00e9d\u00e9 qu&rsquo;on peut fabriquer un pain. En effet, les microorganismes qui se multiplient et se nourrissent de farine produisent du gaz carbonique ou CO2, qui fera \u00e9ventuellement lever le pain. <br \/><br \/>Les pains au levain sont plus rares de nos jours, quoique leur popularit\u00e9 affiche r\u00e9cemment un regain, probablement \u00e0 cause de leur ar\u00f4me, de leur go\u00fbt plus acide et de leur grande qualit\u00e9. L&rsquo;utilisation des levures pour faire lever un pain est plus courante dans l&rsquo;industrie alimentaire, car elles sont plus efficaces que le levain et elles permettent de mieux pr\u00e9dire le r\u00e9sultat du produit. De plus, elles procurent des pains moins denses et sans arri\u00e8re-go\u00fbt acide. <br \/><br \/>Savez-vous que le levain contient des bact\u00e9ries (bact\u00e9ries lactiques) qui produisent des compos\u00e9s, comme les acides lactique et ac\u00e9tique, qui donnent son go\u00fbt exquis au pain au levain? C&rsquo;est aussi la production d&rsquo;acide qui retarde le processus de d\u00e9veloppement des moisissures dans le pain. Cela nous permet de conserver un pain au levain plus longtemps qu&rsquo;un pain pr\u00e9par\u00e9 avec de la levure. <br \/><br \/>Par ailleurs, l&rsquo;acidification de la p\u00e2te lors de la longue p\u00e9riode de fermentation que requiert la pr\u00e9paration d&rsquo;un pain au levain active une enzyme pr\u00e9sente dans la farine. Cette enzyme, appel\u00e9e phytase, s&rsquo;attaque et d\u00e9grade un compos\u00e9 nuisible \u00e0 l&rsquo;absorption compl\u00e8te des min\u00e9raux contenus dans la farine. Il en r\u00e9sulte une meilleure assimilation des min\u00e9raux par notre corps lors de la digestion du pain au levain. <br \/><br \/>Rappelez-vous que seulement trois ingr\u00e9dients sont n\u00e9cessaires pour faire du pain: la farine, l&rsquo;eau et le levain\/levure. Certains autres ingr\u00e9dients ajout\u00e9s permettent d&rsquo;acc\u00e9l\u00e9rer le processus de fabrication, d&rsquo;am\u00e9liorer la texture ou la conservation des pains industriels. Dans les ann\u00e9es 50, toutes les boulangeries n\u00e9cessitaient au moins 8 heures pour produire le pain. Aujourd\u2019hui, les boulangeries industrielles produisent le pain en moins de 20 minutes.
